Gingerbread Men Recipe
- 2 cups Cummins Milling First Quality Bakers Flour
- 125g butter
- ½ cup sugar
- 1 egg yolk
- 1 teaspoon of bicarbonate of soda
- 3 teaspoons of ground ginger
- 2 ½ tablespoons of golden syrup
- Royal Icing
¼ cups of pure icing sugar (do not use icing mixture)
1 egg white
2 drops of lemon juice
Ginger Bread Method
Warm the golden syrup in a microwave until runny (for approximately 30 seconds, depending on wattage).
Cream the butter and sugar until white. Add the egg yolk and beat well.
Slowly add sifted Cummins Milling First Quality Bakers Flour, other dry ingredients, and the golden syrup. Mix well.
Empty the dough on the bench and lightly kneed. Place the dough on baking paper and roll out to 3mm thick.
Using a gingerbread cutter, cut out shapes. Approximately 20 (depending on size of cutter)
Bake in a pre-heated oven at 180 degrees C (160 degrees C fan-forced) for 15 minutes.
When cooled decorate the Gingermen with royal icing.
Royal Icing Method
Double sift the pure icing sugar.
Beat the egg whites until soft peaks appear.
Add pure icing sugar 1 teaspoon at a time and beat on medium speed, or with wooden spoon.
When icing is at a good consistency add the lemon juice. Colour icing as required.
Decorate the gingerbread men as desired.
