Jaffa Muffins Recipe
- 600g Cummins Milling self raising flour
- 5g bicarbonate of soda
- 250g castor sugar
- 2 eggs, lightly beaten
- 250g chocolate bits
- 250ml milk
- 250g melted butter
- 10g orange zest
- 125ml orange juice
Preheat oven to 180°C(160°C fan-forced).
Sift the flour and the bicarbonate of soda together (twice).
Place the flour mixture in a mixing bowl, add sugar and chocolate bits.
Using an electric mixer, combine the butter, eggs and milk.
Add the zest and flour mixture to milk, butter and eggs. Stir until just combined (do not mix well)
Spoon the mix into muffin trays and bake for approx. 20 – 25 minutes.
